Today I am doing something a little bit different. I LOVE macaroni and cheese.. all kinds of macaroni and cheese. I have to have mac & cheese on a weekly basis… it’s a must. So, I am sharing a recipe from my overflowing mac & cheese files.
Creole Macaroni and Cheese
4 Tbsp butter
1/2 chopped onion
1 chopped red pepper
5 Tbsp flour
3 cups milk
2 cups freshly grated pepper jack cheese
4 cups freshly grated sharp cheddar (set aside 1 cup for top)
3 tsp Creole seasoning
1/2 tsp salt
1/2 tsp pepper
16 oz package of shells or favorite shaped pasta
Preheat oven to 350 degrees
Cook pasta according to package.
In a large pot or dutch oven, melt your butter. Add your onions & red peppers. Cook for approximately 5 minutes, stirring. Add in your flour and cook a couple more minutes.
Over medium heat, pour in your flour to your butter & veggie mix. Stir until nice and thick. Remove from burner.
Mix in your cheeses, creole, salt & pepper. Stir until cheese is all creamy & melted.
Pour into a casserole dish, top with remaining cheddar cheese and bake for approximately 30 minutes.
Grab a big o bowl and devour!
