Red Velvet Cocoa Cupcakes

I made these yummy little cupcakes today for my sweetie. They would make a delightful dessert for Valentine’s Day too!

*Important*-You will want to set the mood for baking these little guys… I chose Drew’s Famous “For my Valentine”. Sooooo nice! Perfect. Now its time to put on our pretty aprons and begin baking.

Ingredients-
Butter
Sugar
Vanilla
2 Eggs
Red Food Coloring
Flour
Cocoa
salt
Chocolate Jello Mix
Buttermilk
Milk
Powdered Sugar
White Vinegar
Baking Soda

First thing you want to do is cream 1/2 cup of butter, 1 1/2 cups sugar, and 1 tsp. vanilla

Add 2 eggs and 1tbsp red food coloring to your mixture and whisk together in your mixer.
In another bowl combine 2 cups of flour, 1/4 cup cocoa, 1 tsp salt, and 1 packet of chocolate jello mix and stir it together. Add your flour mixture and 1 cup buttermilk into your cake batter and continue mixing.

In a little bowl- combine 1 1/2 tsp of baking soda to 1 tbs. of white vinegar. Again, add to you batter and mix thoroughly.

Lightly grease your cupcake pan and fill each cup 3/4 full so it has room to rise during the baking process.

Bake at 350 degrees for about 25 minutes.

Meanwhile you need to get you’re frosting brewing!
Melt 1 3/4 sticks of butter
Once melted add 4 tbs. of cocoa
1 tsp vanilla
7 tbs. milk
Whisk together and remove your pot from the heat.
Add 2 cups powdered sugar and mix thoroughly so you have no clumps.

Place cupcakes on a cooking rack and drizzle warm frosting over your cupcakes. Grab a cute serving dish and serve warm to your sweetie! 🙂
