Yummy Breakfast Burritos!

One of my most favorite things to eat is breakfast. Another favorite is Mexican food. Combine those two together and you get a whole lot of yummy rolled into one. Here is a super easy and simple recipe I snagged from my mom last year. Best of all it is completely customizable… add any little extra ingredients your heart desires. This recipe will yield 16 breakfast burritos. Just throw them in the freezer after rolling into foil and you have a nice stash just waiting for you.

Let’s get started! 🙂

Ingredients:
16 large super soft tortillas
16 eggs
3-4 cans of Del Monte Diced Potatoes
1 can Hatch Green Chiles
3 slices Velveeta Cheese
1 lb Tillamook Sharp Cheddar freshly grated
3/4 Heavy Whipping Cream
Salt & Pepper to taste
Butter to grease your pans

~~My extras added in this batch~~
10 sausage links cooked and chopped
1 Container of Santiago’s Green Chili

Fry your canned potatoes in a tad of butter until golden brown. Approximately 40 mins. Salt and pepper to taste Set aside
Add eggs, heavy cream, salt and pepper to a mixing bowl and whisk thoroughly.
Cook your scrambled eggs mixture on low as not to burn them. Add 3 slices of Velveeta Cheese about half way through. Be careful not to stir to much or you will not have fluffy eggs. The key here is SLOW & EASY. I love soft, fluffy, light and airy eggs. 🙂
You can begin to assemble your burritos now with your cheese and green chiles.
I took mine a step further today and fried up 10 sausage links and chopped them up.
I also heated a container of Santiago’s Green Chili – It is the BEST when you do not have any homemade on hand.

Set up your burrito assembly line. Stack 16 square pieces of foil and set all your fix-ins in a row.

It’s now time for the fun part…. building the burrito.
With a serving spoon add your scrambled eggs.
Add a serving spoon full of the potatoes.
Sprinkle a tbs of green chiles
Sprinkle in some sausage (optional)
Add 1-3 tbs of your Green Chili (optional)
Sprinkle a nice amount of your shredded cheese.

Now just fold the ends and roll it burrito style. 🙂

Burritos for days

Pile into the freezer right away. When your ready to devour one of these little guys.. Preheat the oven to 400 and bake for 40-45 minutes.
The ends will be golden brown and the burrito will have a nice crunch. Mmmmmm. I’m going to go make one now.

LOL! They really are yummy + easy to make! Never tried working out while looking at food. Wondering if it works! :P~
